This healthy Shrimp Limone recipe that only takes 30 mins to cook, but brings lots of nutrition. Serve the shrimp with a steamed vegetable to make it an LCHF recipe. Enjoy!

- Ingredients
- 12 oz fettuccine pasta
- 2 lemons
- 4 tsp olive oil
- 1 lb raw shrimp
- 1 large onion
- 1 ½ lb asparagus
- 2 tsp minced garlic
- ½ tsp pepper
- ¼ tsp salt
- ¾ cup half and half
- 1 cup basil leaves
- ½ cup pitted kalamata olives
Directions
- Clean the shrimp and put aside.
- Slice the onion thinly and put aside.
- Rinse the asparagus and cut up in 1 ½ inch pieces and set aside.
- Mince the garlic and set aside.
- Boil pasta according to package directions. Before draining pasta remove and reserve 1/3 cup pasta water. Drain pasta and place into serving bowl.
- Grate 2 tsp lemon zest and squeeze 3 tbsp juice from lemons.
- Heat 2 tsp oil in pan on medium heat.
- Add shrimp and sauté for 2-3 minutes until just cooked, transfer to plate.
- Heat remaining oil in skillet.
- Add onions and sauté until translucent.
- Add asparagus, garlic, pepper, salt and sauté for 2 to 3 minutes until asparagus is crisp tender.
- Stir in cream, lemon zest and juice, basil and olives and bring to a boil.
- Add Pasta, shrimp, reserved cooking water, toss to mix and coat.
- Serve in a big bowl.
