A Clean Eating and LCHF Recipe - Shrimp Limone

This healthy Shrimp Limone recipe that only takes 30 mins to cook, but brings lots of nutrition. Serve the shrimp with a steamed vegetable to make it an LCHF recipe. Enjoy!

  • Ingredients
  • 12 oz fettuccine pasta
  • 2 lemons
  • 4 tsp olive oil
  • 1 lb raw shrimp
  • 1 large onion
  • 1 ½ lb asparagus
  • 2 tsp minced garlic
  • ½ tsp pepper
  • ¼ tsp salt
  • ¾ cup half and half
  • 1 cup basil leaves
  • ½ cup pitted kalamata olives

 Directions

  1. Clean the shrimp and put aside.
  2. Slice the onion thinly and put aside.
  3. Rinse the asparagus and cut up in 1 ½ inch pieces and set aside.
  4. Mince the garlic and set aside.
  5. Boil pasta according to package directions. Before draining pasta remove and reserve 1/3 cup pasta water. Drain pasta and place into serving bowl.
  6. Grate 2 tsp lemon zest and squeeze 3 tbsp juice from lemons.
  7. Heat 2 tsp oil in pan on medium heat.
  8. Add shrimp and sauté for 2-3 minutes until just cooked, transfer to plate.
  9. Heat remaining oil in skillet.
  10. Add onions and sauté until translucent.
  11. Add asparagus, garlic, pepper, salt and sauté for 2 to 3 minutes until asparagus is crisp tender.
  12. Stir in cream, lemon zest and juice, basil and olives and bring to a boil.
  13. Add Pasta, shrimp, reserved cooking water, toss to mix and coat.
  14. Serve in a big bowl.
