LCHF Foccacia Bread

We are getting closer to the holidays, so it's time to start planning the menus. Here is recipe of a flavorful and juicy Foccacia bread which works great at both the Thanksgiving and Christmas table.

Ingredients

  • 4 eggs
  • 200 grams crumbled Philadelphia cheese
  • 100 grams melted butter
  • 1 cup almond flour
  • 2 tbsp Psyllium seed husks
  • 1 tsp salt
  • 1/2 tsp baking powder
  • 100 grams feta cheese
  • 10 olives
  • 1 small red onion
  • A pinch of sea salt
  • Olive oil
  • Fresh rosmary

Directions

  1. Heat up the oven on 392 degrees.
  2. Whip the eggs until fluffy.
  3. Add the Philadelphia cheese and mix well.
  4. Add the melted butter and mix.
  5. Mix all the dry ingredients in another bowl and then add it to the mixture.
  6. Pour the mixture onto a baking pan. The mixture should be about an inch thick.
  7. Chop the onion in large chunks and sprinkle it over the mixture.
  8. Chop the olives finely and sprinkle them over the mixture.
  9. Sprinkle the feta cheese, rosmary and sea salt over the mixture.
  10. Drizzle some olive oil over the mixture and place the pan in the oven.
  11. Bake the bread for about 25 minutes.
